Healthy Tailgating Recipes - Part 8

I have no idea why College Gameday is going down to see Hampton vs. Florida A&M (payday probably), but it really doesn’t matter. I’ll be watching very closely to my choice for the game of the week, and that’s between the 1 loss #4 Florida Gators and the #25 South Carolina Gamecocks. With the recent shake up in the BCS standings, Florida’s got something to prove against South Carolina (3rd in the SEC East rankings) to make a case for a Championship game appearance. Florida’s got last year’s Heisman Trophy winner in Tim Tebow, who leads the offense with 17 passing touchdowns and 10 rush touchdowns. But don’t count out the Gamecocks, they are my choice for the big upset (only because I couldn’t use the Florida Gators logo cause it’s copyrighted)!

So what’s on the menu? Well, I’ll tell you what… how about some Healthy Tailgating Recipes!!

Johnny Road Trip

Since I’m making a road trip to Arizona this weekend to see my Alma Mater (Arizona State University Sun Devils) play at homecoming, I decided, “Why not look for tailgating tips for road trippers?” Yes, I know that we are 3-6, but I think that we can still turn the season around and win some games. In case you couldn’t tell, I’m a Sun Devil until the day I die, no fair-weather fans here my friends!

In my search I found a site run by the fans. It’s always inspiring to see something run by the people, so I took a look and I managed to find some pretty healthy tailgating recipes. Check ‘em out!

Omelets

I’m gonna make an audible on the line of scrimmage here and say ditch the cheese, bacon and sausage, substitute ham for chicken and hike!! these few changes will make it a healthier choice and you won’t sacrifice on taste!

“Omelets are a great breakfast tailgate item allowing everyone to add their favorite ingredients. Each omelet must be made individually, but its worth it. To make omelets, use a propane stove or simply put your omelet pan right on the grill. Time Required: Less than 1 hour prep prior to tailgate, 5-10 minutes cook time per omelet

Skill Required: Moderate skills needed (minimal skills needed to make scrambled eggs with omelet toppings)

Ingredients:

  • 2-3 eggs per person
  • Butter
  • Omelet pan
  • Omelet toppings of your choice, such as:
    • Shredded cheese
    • Ham [Insert Chicken] & turkey (deli slices cut into squares or chunks)
    • Cooked bacon and sausage
    • Diced green peppers & onions
    • Mushrooms
    • Baby shrimp

Steps:

  • Beat eggs together
  • Melt some butter in the pan
  • Add desired toppings (except cheese) and saute for a minute or two
  • Pour enough eggs into the pan for one omelet
  • Allow the eggs to cook, lifting the sides of the omelet to allow more egg to reach the hottest part of the skillet
  • When the eggs are only slightly runny on top, flip the omelet
  • Fold the omelet over and serve”

Pulled Chicken

Audible number two… BLUE 22! BLUE 22! No need for salt… HIKE!

Pulled Chicken is a delectable addition to your tailgate that is surprisingly easy to make. Use this recipe to make great pulled chicken sandwiches! Time Required:  60 minutes prep time

Skill Required: Minimal to moderate grilling skills needed

Ingredients:

  • 2 Regular-sized bottles of BBQ Sauce
  • 6 Boneless skinless chicken breasts
  • Salt, pepper, your favorite chicken seasonings, Cajun seasoning

Steps:

  • Season six boneless, skinless chicken breasts to taste, and grill slowly until fully cooked, brushing with your favorite BBQ Sauce. It is very important to grill slowly to maintain juiciness.
  • In a pot, mix two bottles of barbecue sauce, salt, pepper, and spices to taste, and one cup of water, and bring to a boil while stirring constantly to prevent burning. Lower heat to simmer and stir occasionally while pulling chicken
  • Pull the chicken breasts apart into long shavings with two forks (but if you get tired after doing this for two or three, feel free to wash hands thoroughly and manually continue)
  • Add the chicken to the pot of BBQ sauce and stir until chicken is drenched. Continue to simmer while stirring occasionally for 25 - 30 minutes.”

    Can you explain, to a non-wise Brit like me, what a ‘tailgating’ recipe is? I’ve been meaning to ask you for ages. I gather it has something to do with baseball and food…………????

    Hey Tusc,

    A tailgating recipe is a food recipe used at a football tailgate. They differ from normal recipes because when you are at a tailgate (usually in a parking lot), you typically only have a grill and a cooler that can fit in a car. So you have to have a recipe that works under those restrictions.

    Thanks Andrew, that’s really helpful. But I still dont know what a ‘tailgate’ is… ok, I’m going to look it up.

    Wikipedia states:

    Tailgate is an American English word denoting the door or ‘gate’ at the back of a wagon, pickup truck, SUV or other similar type of vehicle that is hinged at the bottom and can be opened for the convenience in loading cargo into the rear of the vehicle

    In British English, the tailgate, sometimes called the hatch, is a door on the back of a vehicle that can be moved either up or down, such as on a pickup truck or hatchback.

    Ok, right, I’m with you now…..lol…… so you go to a football match and cook your food at the back of your car? How cool!! We dont do things like that here at football matches, we buy burgers and chips at the nearest van!!
